As I mentioned earlier in the week, egg production has been irregular, yet on an overall increase, 7 one day 2 another 3 today. This is much better than the 3-4 a week. Today, in celebration of the increase in eggs I made a hollandaise sauce for an eggs benedict. All recipes is an excellent resource and I tried this recipe today. It was a bit lemony and I added an extra egg yolk but in all it was quite tasty and much easier than other traditional recipes I’ve used in the past.
